Here's what Falcon Speciality the importer of this coffee have to say about it:
Anserma is located in the western area of the department of Caldas, an agricultural centre where coffee cultivation stands out.
The cooperative began operating in 1967 and holds extensive knowledge and experience in coffee commercialisation, backed by the National Federation of Coffee Growers of Colombia and the Departmental Committee of Coffee Growers of Caldas. It operates across the municipalities of Anserma, Risaralda, San José, Belalcázar and Viterbo.
Its main purpose is the commercialisation of coffee and other agricultural products, with the aim of improving the economic, social, technical and cultural conditions of its members, insofar as these relate to agricultural activity and, in particular, to coffee production in all its forms.
The cooperative has 2,083 associated coffee growers who cultivate excellent-quality coffee with dedication and care. Alongside coffee, members also grow crops such as sugarcane and bananas for additional income.
The cooperative now operates a wet mill where cherry from local producers is received and processed. On arrival, the coffee is screened using a new colour sorter capable of processing 16 tonnes of cherry per hour. It is then floated and placed into sealed plastic containers for 96 hours.
The coffee is then moved to a mechanical silo, where it is dried slowly and left undisturbed at first. Once the moisture has reduced, it begins to be turned within the silo. Drying takes approximately 100 hours from start to finish.
Finally, the coffee is packed in GrainPro within its parchment and later milled in readiness for export.
