The semi washed process used for this coffee is a novel hybrid 2 staged fermentation process, the cleaned coffee cherries are pulped before a relatively short 24 hours in the fermentation tank. This accelerates the fermentation process, dials back the funk & elevates the complexity while maintaining clarity of flavour.
