A complex sweet cherry & passion fruit acidity interchange with flavour highlights of honeycomb & toffee. This high altitude larger than average Pacamara Arabica variety needed a little extra heat early in the roast & finish temperature to ensure good core development. We found a medium roast profile gave the toffee & honeycomb flavours more prominence & overall a little more body in the cup. This coffee carries milk or alternative well.
